White Asparagus

A specialty in Spain. It is served in all manners. My favorite was a fried version coated lightly in egg and cheese. The result is a core that literaly melts out of the core as you cut into it. Slightly sweet and decadent!

I was fortunate enough to be on an expense account during my business trip in April, and so was able to try two different white asparagus dishes. The first was four fat pieces of asparagus, beautifully skinned and presented with smoked North Atlantic salmon, served with a vegetable-base mousse for dipping. Awesome. The second was Asparagus served in the Flemish-style (I can't remember exactly the correct spelling in Flemish, Flamande or something like that.) It was served with prosciutto and chopped, cooked eggs. Again, it was fab.
